It’s Time to Start Eating Pumpkin

Layali_1Did you know that pumpkins are choc -a-block full of health benefits? A superfood!! It contains high levels Carotenoids…that thing that gives it its gorgeous orange color. Don’t even get me started on the benefits alone of its color, my house is full of orange, I just can’t get enough of it (don’t worry I didn’t paint the walls orange:-). I wrote a post a while about color therapy with orange promoting creativity, it’s no wonder why I gravitate towards it.

Some of the Benefits of Pumpkin:

Essential fatty acids – Great source of essential fatty acids, a vital nutrient providing protection against cancer, blood pressure and arthritis.

Immune boosting vitamins – With Vitamin A, C, E and zinc, it supports tissue repair and wards off free radicals, preventing premature aging, keeping your skin hydrated and nourished.

Fiber Filled  Contains 7 grams of fiber per cup leaving you feel nice and full as well as promoting a healthy digestive tract.

Potassium – Potassium helps to restore the bodies level of electrolytes making it a perfect post heavy-workout meal.

Skin Beauty Full of Beta-Carotene an antioxidant that protects healthy cells from free radicals, reducing the signs of wrinkles.

Good for Your Eyes With just a 1 cup serving of pumpkin it contains over 7 times more the recommended daily intake of vitamin A.

It’s Versatile

Okay, sometimes pumpkin can seem like a bit of a boring vegetable, but it really comes down to how it’s prepared. It is in fact a very versatile ingredient when it comes to cooking it, from pie fillings, to adding color to mashed potatoes, gorgeous creamy soups, risotto’s, tasty base for a curry, to an alternative to oil or shortening when baking…wait really? Yes, you can replace half the amount of oil/shortening for pumpkin. Did I mention it makes a delicious brownie?! Yup, tried and proven. Yum!

Your Handmade Beauty Routine

Talk about versatile, you can slap pumpkin puree straight on your skin for extra skin benefits.

For a face mask mix:

  • 2 tsp pumpkin puree
  • 1/2 tsp honey
  • 1/2 tsp milk

Apply to face, leave for 10 minutes and rinse with warm water.

For a body scrub mix: 

  • 2 tablespoons pumpkin puree
  • 1 tablespoon honey
  • 1 tablespoon castor sugar

Apply to skin in circular movements paying special attention to heels, knees, and elbows or any dry area massaging it gently in. Rinse with warm water.

My Favorite Pumpkin

As we know pumpkins come in all different sizes and shapes, from big to small, from long to round. My favorite would have to be the elegant butternut. Talk about an hour-glass figure! It has a perfect flavor, easy to cut, and doesn’t contain the tedious stringy bits! I actually use it in a lot of my cooking. At the Top of the Recipe List –  and always a favorite on our table would have to be a Butternut Risotto (recipe to come). Next would be a simple roast topped with greens, parmeggiano and lots of olive oil, and a good old winter warming Butternut & Orange Soup.
